Dad's Favorite Strawberry Pie!
This is my Dad's favorite dessert. My family likes to make it for special occasions. Pies are one of my favorite foods to prepare.
Ingredients
Filling:
* ½ cup brown sugar
* 1 cup sugar
* butter
* lemon juice
* all-purpose flour
* 2 cups strawberries
* 2 cups rhubarb
Crust:
* 1 ¼ cup flour
* ½ cup cold butter
* ¼ cup ice water
Directions
Preheat oven to 450 degrees F.
Melt 3 tablespoons of butter and add sugar, brown sugar, lemon juice, and 1 tablespoon flour. Stir the mixture for 1 minute, to dissolve the sugars. Add the rhubarb and cook for 4 to 6 minutes. Add the strawberries and continue to saute for 3 minutes
In a separate bowl, combine flour and small pieces of butter until coarse crumbles appear. Slowly add ice water. Gather dough into a loose ball, wrap in plastic, and then refrigerate for at least 30 minutes. Divide into 2 pieces, form into balls, and flatten into disks (one for bottom and one for top of pie).
Place bottom disk into pie pan and press against sides. Pour filling in and place top disk over. Press the sides of the disk to edge of pan to seal. Cut vents into top of pie.
Bake for 10 minutes, then lower heat to 350 degrees F and continue baking for an additional 50 to 60 minutes; the filling should be bubbling and top crust golden brown. Cool completely before cutting.
Top with homemade whipped cream!
